About Happy Rito: Founded by Ethan Huynh in 2021 after years of cooking seafood with his father, the plucky and passionate entrepreneur has been immersed in seafood his entire life thanks to his father, who started off selling crawfish and various other seafood to all kinds of restaurants.
Later, Huynh Sr. would eventually open his own deli specializing in selling seafood, subsequently roping in the teenage Ethan to help out with the business.
Inspired by the flavors he grew up with in Lousiana as well as his own Vietnamese heritage, Ethan would eventually move to Austin where he would impart this fusion of Cajun-Vietnamese flavors to the Austin community as a kind of tribute to his father but also to serve the local community.
The restaurant is affectionately named after Huynh’s son, and has a variety of fried and boiled seafood offerings, including shrimp, blue crab, oysters, fish, gumbo and po’boys, all with their own unique Vietnamese twists on the traditional Cajun fare.
