About Rollie Rolls: Rollie Rolls introduces Austin to a Thai style of making ice cream – originally called Thai rolled ice cream. This style became increasingly popular in Thailand as a street food. 

What sets this style apart from regular ice cream is the preparation. Vendors mix and chop their homemade ice cream base and fresh fruit together on a -22°F cold pan. Once the mixture becomes a gelato-like texture, the “ice cream artist” (as named at Rollie Rolls) spreads the ice cream thinly and then scrapes the layers into their rolled shapes.
